The flavors in the sauce are nothing special, and the same ones that I cook with all the time, but when combined with this exact blend of greens, something magical happens. I have no affiliation with Organic Girl, but their SUPER GREENS product is how I discovered this specific blend of greens, so I need to give credit where credit is due; before that I was either buying a variety of fresh local greens, or Zen Blend from Earthbound Farm, which will do just fine if you can't find the SUPER GREENS, but it will be slightly less magical.
What You Need
• About 1 Tbsp EVOO
• 3-4 Cloves of garlic
• SUPER GREENS (baby red chard, baby tat soi, baby spinach, baby green swiss chard, baby arugula)
• Juice of half a lemon
• About 4 Tbsp Mirin rice wine (in the same section of the store as the soy sauce)
• About 3 Tbsp Soy Sauce
• Crushed red pepper to taste
Note: these are rough measurements and I never measure things out when I make this, those are just estimates to make sure you have enough on hand–trust your sense for a 'swirl' and a 'splash', just don't overdo it since the flavors of the greens themselves are wonderful!)
What To Do
In a large sauté pan, warm olive oil over medium heat; using a garlic press (or very finely mince), add the garlic and sauté for a minute, just until fragrant. Cover the entire surface of the pan with the greens and cook until some pieces are beginning to wilt.
Squeeze lemon half over greens and stir. Cook for 1-2 minutes, then give the Mirin a good swirl over the pan, and continue to push them around a bit to ensure that they are all cooking. Once the greens are wilted, add a splash of soy sauce and crushed red pepper; turn up the heat to just under high for 2 minutes, then remove from heat. There should be enough of the sauce leftover to soak into what you serve them over, or lick from the bottom of the bowl if you're eating them on their own.
